Why a Werri Beach bunch leans hardy

Anna, our qualified florist. She cut her teeth in North Carolina, then on a boutique bench at Salt before she joined us.

Here is what people get backwards about a coast like this. The salt air is kinder to most flowers than people expect. The humidity holds moisture in the petals, and a bunch will often last longer here than it would in a dry inland heat. The catch is the dense, packed blooms. When the humidity climbs past ninety in the warm months you get botrytis, which is just grey mould, and it settles into the tight centre of a garden rose, a peony or a dahlia before anyone is home to notice. Put a hydrangea on an exposed porch in summer and it will not see out the afternoon.

Nothing is grown down here, so the stems come off the Sydney market at Flemington, down the highway and into the cool room the same morning, in the shop before lunch. What earns a spot on an exposed doorstep is the waxy, tough stem: proteas, banksia, flannel flower, chrysanthemums, carnations. They shrug off the humidity, and the salt spray on the frontage, the way a soft rose never will. I could tell within two days which bunches had gone out soft. The dense ones went first.

One more thing about this stretch. People here have paid a premium to live on it, the highest mortgages of any town along this coast, and they can spot a mean bunch from across the room. So I would rather the money went into the flowers than the wrapping. A proper focal bloom and a full hand of stems reads as generous. Gaps and cellophane do not.

Same-Day Flowers to Werri Beach, Start to Finish

Nobody grows flowers on this stretch of coast. The nearest cool room is eleven kilometres up the road, and that is where a Werri Beach bunch actually gets built.

Off the Sydney market at dawn and into the cool room by mid-morning, a couple of hours on a refrigerated truck. That is why a headland bunch leans on the hardy, waxy stems: they hold through the salt and humidity that a soft rose cannot.

People ask whether a website can really service a town of five hundred out on a headland. The honest answer is that we do not pretend to have a shop on Pacific Avenue. There is no florist in Werri Beach or Gerringong at all, the nearest is that Kiama cool room. What we have is someone close enough to know the run, and a 2pm cut-off that leaves them the afternoon to do it properly. Because it goes to a florist near the recipient rather than a box shipped from a warehouse, it is made fresh that morning, not cut three days ago and trucked in. The South Coast is not new ground for us, either. Nowra was one of the first pages we ever built down this way.

The name, if you are wondering, is understood to come from a Dharawal word for the creek at the north end of the beach, though some read it as a nod to the black swans that were once all over the lagoon. Nobody has fully settled which. People were on this beach a long time before anyone was faxing orders to it.

What to Send to Werri Beach

You have seen the bunches. The harder part on this coast is landing one at a house that might be empty until the weekend. A fair few of the orders here are teacher and colleague thank-you flowers, given how much of Werri Beach works in the schools up the line. A good share are get-well bunches to Kiama hospital, which in our experience runs more to rehab and the slower recovery of an older ward than to quick day surgery. For those the florist boxes it so it travels, keeps it low-scent for a shared room, and picks stems that will still be going a fortnight on.

Both of Them Are at Work Until Three

You cannot be at the table, so the flowers go instead. On a weekday that table is often empty until the school run, which is the thing to plan around here. A florist who knows the run will try the morning, or leave it in the shade out of the salt wind and ring you, rather than stand it on a hot verandah at noon. Birthday flowers for a milestone, often a 60th around here, or something chosen for Mum if that is who it is.

For a birthday I want something with a bit of noise to it, not a bunch that fades by the weekend. Gerberas hold their colour and their face for a good week, and they carry no heavy scent, which matters if it is going to a staffroom. Bright over delicate, every time, for a spot like this. If it has to sit a few hours before anyone gets to it, that choice is the difference between a photo on Friday and a bin on Friday.

Sending flowers to a new baby at home?

They are probably buried in visitors and running on no sleep, so whatever you send has to earn its spot in the room. Kiama has no maternity ward, so these almost always go to the family home once they are back from Wollongong, usually in that first foggy fortnight. A safe-place note helps, since the door does not always get answered on a broken night.

A newborn's room is small and the parents are raw to smell on no sleep. A tall, heavily perfumed arrangement takes over a bedside table and competes with a baby who already owns the room. Go compact and low-scent. No lilies near a newborn, the pollen is the last thing that room needs. Something from the new baby range built small will sit on a shelf and last, rather than a statement piece nobody has a spare hand to re-cut.

How to Reach a House That's Shut Half the Week

You do not need an anniversary or bad news to send these. Half the reason people order to Werri Beach is simple: someone they love is up here and they are not. If it is a holiday let or a cabin at the park, give us the site or unit number, not just the street, or the driver spends twenty minutes guessing. And if the words are the hard part, short beats clever. A thinking-of-you bunch with "been thinking of you" on the card lands better than a paragraph.

The question that came up over and over on the phones was the same one, will it still be alright if it sits a day before anyone finds it. On a closed-up holiday house, soft stems will not. I always pushed those callers toward the tough end of the range, natives or chrysanthemums, the stems that can wait on a shelf out of the sun for a day and still look like something when the door finally opens.

Give us a mobile for whoever is receiving, and for a holiday let or a park cabin, the site or unit number along with the street. If the door does not answer, the driver finds a shaded spot for it and calls, rather than letting it cook on a hot step. The flip side is Friday, when the coast fills up as the weekenders come down the Princes Highway, so for a holiday house, later in the week often lands better than a Monday. After You Order

Once it is in, it goes to the florist closest to the run and they build it that morning. Years ago we ran the deliveries ourselves. Standing outside a hospital in the heat, a baby screaming in the back of the car, five minutes to get a bunch to a reception desk, no park in sight. The holiday-home streets are the prettiest run we do and the most aggravating, half of them shut up when the van gets there. The order that used to catch us out was the one that landed at a house closed till Friday. It sat on the porch in the sun and the first we heard about it was a bad review. So we changed the default. The van does not go out now until someone confirms a person will be there, or names a safe spot. It costs a phone call. It beats a wilted bunch on a locked verandah. And if they have not texted you back, give it a day. On a holiday street they might not even be up there yet.
