Casino is our part of the world, inland from us off the coast, beef country more than flower country, which makes it the sort of town where a delivery turning up actually gets noticed. On the photos you mentioned, that's the thing worth having when you can't see the arrangement in the flesh before you buy. You're picking for a birthday you won't be standing at, so being able to look properly at what you're choosing does a lot of the reassuring. Why the Wet, Not the Heat, Is What I Watch on a Casino Order

People hear a warm town and assume the heat is the enemy. It is not, or not on its own. I spent the better part of three years, and something like ten thousand calls, taking orders off the phones for towns up and down the Northern Rivers, and the ones that came back to bite were almost never the 38 degree days. They were the still, wet ones, when a box of roses would leave the bench looking perfect and spot before the recipient ever got home. Casino gets a lot of those.

Warm air holding a load of moisture is where botrytis gets going. Botrytis is grey mould. It starts as pinprick spots on the softest petals, roses and ranunculus first, and once it is in, the bloom browns and folds inside a day. February here has dropped more than 500mm in a single month. That is not weather a dense garden rose was built to sit in on a front step.

The doorstep is only half of it. Everything that comes into a town like this has travelled, most of it down the Pacific Highway from the Sydney market at Flemington, and a wet week can add half a day to that trip. A stem that left the cool room strong has the reserve to take it. A tired one does not. That is why the boring part, a hard cut and clean water before it ever leaves the bench, matters more here than it does in the city. None of that shows up in a photo, which counts for a lot when you are sending from a long way off and cannot check it yourself. It is the difference between flowers that last the week and a bunch browning by Thursday.

So for the warm half of the year I steer a Casino order toward gerberas, chrysanthemums and native stems, protea and banksia and wax flower. The waxy skin on a native barely notices the humidity, and it holds a fortnight in this air where a soft garden rose in a wet week can be done in five days. Roses still work here. White carries across every tradition in a town like this, and chrysanthemums, lisianthus and oriental lilies hold their shape in the heat far better than a soft garden rose. If it is going graveside rather than into an air-conditioned chapel, that matters even more. An hour in the open air is hard on thin petals, and a wreath or a sheaf sits better outdoors than a vase that can tip on uneven ground.

Flowers to the Hospital Ward, and What Actually Gets There

A hospital delivery worries people more than it needs to. I have done the hospital-flower run myself, years back, a newborn screaming in the car and five minutes to get to reception in the heat, so I know the small panic in it. Flowers go to Casino & District Memorial on Hotham Street the same way they go anywhere, to reception, where staff log them and carry them through to the ward. Put the full name and, if you have it, the ward in the notes, and keep the card light, a plain "thinking of you, take it easy" does the job. One honest thing, because it is a district hospital and not a big metro one: people get discharged quickly. If there is any real chance they are heading home in a day or two, send it to the house instead. It is the one call worth making before you order.

Skip the big fragrant lilies for a shared ward. In a small room with someone who is not well, a heavy scent is the last thing they want, and pollen drops on everything. I would send something low and unfussy that earns its bench space: carnations, lisianthus, and an orchid stem that likes the humid air Casino carries most of the year. Save the lilies for the day they are home and can open a window.

Not every order is for an occasion. Sometimes you just heard something, a rough patch, a diagnosis, a run of bad luck, and Casino is a long way from wherever you are. I am Andrew, and with my wife Siobhan I have been running Lily's Florist since we launched the network in 2009. Casino is not a town I can claim to know street by street, but it is in our part of the world. We have passed through it more times than I can count on the way to somewhere else. It is a working town, the Beef Capital, saleyards and the meatworks co-op, not a postcard, and I have always liked it more for that. There is no actual casino, by the way, the locals gave up explaining that one years ago. Come Beef Week each October the whole place fills up. It is the patch where we signed our very first partner florists, a short drive from here. We started with one in 2009. There are more than 800 across the country now.
