Andrew still talks about Lithgow with a chuckle, though his first memory of the place was far from romantic. Duke of Edinburgh, or D of E as they called it back in year 9, Bronze Award. The first leg was catching the train from Strathfield to Lithgow. Early August. They hopped off their bikes at Lithgow station ready for what was supposed to be an eight hour ride to Mudgee. Nobody quite anticipated the westerly wind. Brutal doesn't cover it. Wind chill easily below zero, the kind of cold that gets into your bones and stays there. That eight hour ride turned into eleven hours of pure misery. Cold, wet, absolutely spent, and the lads still had to pitch their tents when they finally rolled into town.
His first memory of Mudgee? Yeah, well, it was super. And by super he means he couldn't feel his fingers. But the honey and pinot noir more than made up for it the next day.
The reason I mention all of this is because Andrew's memory of Lithgow is a physical one. He remembers the cold, the wind funnelling through the valley, the way the temperature dropped as the train climbed from the lowlands. Lithgow sits high. It feels different from Sydney in every way and that matters for flowers too, which is where Anna comes in.
What Altitude Does to Your Flowers

We hired Anna because she'd spent fifteen years making flowers and we hadn't spent fifteen minutes. She trained in North Carolina, moved to Australia, and ran arrangements at a boutique florist in Kingscliff before joining us. When I asked her about delivering flowers to elevated towns, she said something I hadn't considered.
"Altitude changes the way flowers breathe. Lower atmospheric pressure means moisture leaves the petals faster than you'd expect. A bouquet that holds beautifully for ten days at sea level might struggle past six or seven at nine hundred metres if it hasn't been properly conditioned. Lithgow sits up on the western edge of the Blue Mountains and the air is noticeably drier and thinner than Sydney. Florists working at elevation learn to hydrate stems more aggressively before they go out. Extra conditioning time, deeper water buckets, sometimes an overnight soak for lilies and roses before they even touch an arrangement."
Anna also made a point about winter. "Cold altitude towns get frost. Proper frost, not just a chilly morning. If tropical flowers leave a heated shop and hit sub zero air, the cell walls can crystallise and rupture. You get blackening, mushy petals, damage that looks like the flowers were old but actually they were perfect until that thirty seconds between the shop door and the van. Regional florists in places like Lithgow know this. They wrap differently in winter. Tissue first against the blooms, then kraft paper over the top. Two layers. Takes an extra minute but it saves the flowers."

No Sunday delivery. Flower markets don't operate on Sundays, which means no fresh stock. We could send Saturday flowers on a Sunday but they'd already be a day old. We'd rather wait and send fresh on Monday.
