Back in 2011, when we were running our little home office out of a converted double garage in Pottsville, Andrew got wind of a new cafe that had opened up in Varsity Lakes called Blackboard. He was absolutely mad for it. Two times a week, sometimes more if he could justify it, he would make the drive up just to grab an espresso for himself and a chai tea for me. The place was unlike anything else on the Gold Coast or in Northern NSW at that time. True trailblazers when it came to specialty coffee, before every second shop had a La Marzocco and single origin beans. We still talk about those drives, baby Ivy in the car seat, Andrew insisting the coffee was worth the petrol. Looking back, he was probably right.
I mention this because Varsity Lakes has always been on our radar, long before it became the bustling suburb it is today. We have been sending flowers to Varsity Lakes for well over a decade now, and the area holds a genuine place in our story.
