I thought the same thing, early on, before I started paying close attention to how long arrangements lasted after delivery. Flemington Markets in Sydney run Tuesday through Saturday. Florists buy their stock fresh each morning, condition the stems in the shop, and build your arrangement that day. A Wednesday order means the florist picked stems at the market that same morning. They are hours old by the time they reach the vase. A Monday order is different. Markets are closed on Sundays and Mondays, so the florist is working with stock purchased on Saturday. Those stems are already two to three days into their life before they go into an arrangement. They still look good. They are not going to embarrass anyone. But you will probably get five or six good days from them instead of eight or nine.

I first noticed this pattern around late 2011. A woman in Launceston used to call the Pottsville office every Monday morning like clockwork. Flowers to her father, week after week, same order, same style of arrangement. I looked forward to her calls. But after about the sixth or seventh week, she mentioned that the flowers seemed to fade faster than she expected. I pulled up her order history and the pattern was obvious. All Mondays. I rang the partner florist and asked directly. She confirmed it: Saturday stock, conditioned Saturday afternoon, stored overnight, made into arrangements Monday morning. Good quality, fresh enough, but not the same as a Tuesday or Wednesday batch that went from market to vase in four hours. After that, I started mentioning market days to callers when it was relevant. Most people had no idea. Some shifted to Tuesday orders and told me the difference was noticeable.

Boxed arrangements hold their shape better in transit because the stems support each other. There is no water sloshing around in a van. I was eight months pregnant with Asha when Andrew and I bought a flower shop in Kingscliff. I painted the walls. He argued with the accountant who told us not to do it. The shop had a Kodak sign in the window and a cash register from 1979. We knew nothing about flowers. We knew even less about running a business. Asha was born seven months later and Ivy came along during Valentine's week 2011, ten days before the busiest day of the year. The business grew up alongside them.
